2021 Wild & Free Semillon
The wine spent 12 months in new and used French oak with lees stirring occurring
periodically.
This wine has gone through light filtration, but no fining! This means that it will
present sediment in some bottles and some tartaric crystals.

Tasting:
Aspect: golden straw with medium minus intensity, watery rim though slight.
Nose: Notes of crisp golden apples, grapefruit, lemon pith, quince. Hints of
toasted almonds, and pie crust. The nose is medium+ complexity with medium +
intensity.
Palate: DRY, honey, cracked wheat, shaved coconut, pineapple, white cranberry
hay/ straw, sandalwood, marzipan. Primary and secondary fruit aromas are in
perfect harmony with one another. The acidity is high, with intense complexity
and a spectacularly long finish. This wine will benefit from aging in the bottle.
Flavours will intensify and increase in complexity.
Pairings: Aged cheese risotto; roasted butter basted turkey; Cacio e pepe pasta
dish; clubhouse sandwich
